Could someone find the gallery without the password?

The link on its own gets them a password box and nothing more. Galleries aren't indexed by Google, so they don't turn up in search results, and you decide who gets sent the link in the first place.
What if my client passes the password on to someone else?

Then that person can get in. A password keeps strangers out, but it can't stop someone your client chooses to tell, so if a gallery is only meant for the couple, say so in the message you send with it.
How many photos fit in a gallery?

There's no set number of photos. It comes down to the storage on your plan: 2 GB on Premium, 10 GB on Premium +, and 25 GB on Premium ++. Full-size unedited files eat through that far faster than web-sized exports.
Can my client download the photos, or only look at them?

That's your call, per gallery. Leave downloads off and it's view-only; switch them on and they get the full-size files. A lot of people keep them off while the work is still being approved, then turn them on once they've been paid.
Is this on the Free plan?

No. Galleries are a Pro app, so you'd need one of the Premium plans. The Free plan stays free with no time limit on it, but private galleries aren't part of it.
