Will these reviews show up on Google?

No. These are your own reviews on your own website, not posts on Google, Trustpilot or Facebook. If you want reviews on those platforms as well, you'll need to ask your customers there separately.
Isn't it dodgy, approving my own reviews?

You choose what gets published, not what gets written. Approving is a yes or a no, not a rewrite, so the words on your site are the words your customer typed. If one feels unfair, or you'd simply rather not show it, you leave it unpublished.
What happens when someone leaves a bad one?

It arrives like any other review and stays unpublished unless you decide otherwise. Nobody else sees it while you're thinking about it. It's worth reading properly, because a bad one often points at something you can fix.
Do I have to chase people for reviews?
